one of the very first things you’ll notice in vietnam is that everyone dines on the sidewalk on miniature stools. tiny little plastic or wooden stools are pulled out to the curb each day for patrons to sit and enjoy pho, bun cha and green tea while watching the passperbys. in thailand, most people would hang out in the squatting position but here it’s all about the micro stool. every meal is a game of how loooow can you goooo. chairs are out people – stools are in.
each day in vietnam, we’d ask each other… “so for lunch/dinner tonight, do you want to do stools?”
